1/4 small red onion, sliced into thin rounds (3-4 rounds per sandwich)
1/4 tomato, sliced & patted dry with paper towel
1 slice of smoked gouda cheese
1 cup fresh spinach
1 tablespoon mayo mustard sauce (mayo, yellow mustard, dijon mustard, and Worcestershire sauce)
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
