INGREDIENTS:
Wet Ingredients
425 g pumpkin puree (canned or homemade, not pie filling)
240 g light brown sugar (or white sugar)
125 g neutral oil (sunflower, canola)
100 ml milk (room temperature)
2 large eggs
2 tsp apple cider vinegar (or lemon juice)
1 tsp vanilla extract (optional)
Dry Ingredients
280 g all-purpose flour
2 tsp pumpkin pie spice
3 tsp baking powder
½ tsp baking soda
½ tsp salt
Chocolate Layer:
25 g Dutch-process cocoa powder
2 tbsp milk
1 tsp espresso powder (optional)
Decoration
100 g white chocolate (for bone moulds)
INSTRUCTIONS
1. Preheat oven
Preheat the oven to 175°C. Grease and line a loaf tin.
2. Mix wet ingredients
In a large bowl, whisk pumpkin puree, sugar, oil, milk, eggs, vinegar, and vanilla until smooth.
3. Mix dry ingredients
In another bowl, whisk flour, pumpkin pie spice, baking powder, baking soda, and salt.
4. Make the batter
Fold dry mixture into the wet until just combined (don’t overmix).
5. Make chocolate swirl
Transfer about 1 cup of batter to a small bowl.
Stir in cocoa powder, milk, and espresso powder (if using).
6. Layer the loaf
Spread half the pumpkin batter in the tin.
Spoon in chocolate batter, swirl lightly with a knife.
Top with the remaining pumpkin batter.
7. Bake
Bake 50–60 minutes, until a skewer comes out clean.
Cool completely in the tin before decorating.
8. Make chocolate bones
Melt white chocolate and pour into bone-shaped moulds.
Let set, then unmould.
9. Decorate
Place white chocolate bones on top of the cooled loaf for a spooky graveyard effect.
