BREAKFAST
\\\ Blueberry Beet Smoothie:
½ roasted beet
1 cup frozen blueberries
2 large frozen bananas
water, coconut water, or almond milk to desired consistency
Toppings: dried mulberries, mango, pomegranate seeds, raw energy bar chunks, coconut chips, and cacao nibs
LUNCH
\\\ Curried Chickpea Soup:
This was sort of a leftover soup - I threw a bunch of things we had in the fridge together and added some seasonings + about 6 cups of veggie stock. You really can’t mess up soup, so just add the following according to your liking:
One bunch beet greens, stalks and leaves separated and chopped finely
2 Shallots
1 Garlic Clove
1 pound of Baby Bella Mushrooms
Chopped Carrots
Chickpeas
Cooked Pasta Shells
Seasonings: Curry Powder, Pepper to taste

*My mom made this for me and it’s not the healthiest thing ever, but it tastes bomb and I love her so who cares lol

*I followed Judy’s recipe, but subbed lime juice for lemon juice, and just formed the mixture into balls instead
\\\ Gigantic Salad: I added the following in large handfuls to my bowl - the more veggies, the merrier in my opinion
Sweet Potato Burger Balls
Baby Spinach
Chopped Tomato
Fresh Cilantro (Coriander)
Diced Red Onion
Corn Kernels
Tempeh
Dressing: Fresh Lime Juice, Nutritional Yeast, and Tahini Drizzle
