Here’s a simple Ragi Mudde Recipe (for 1 cup flour)—a wholesome Karnataka staple
Ingredients
Ragi flour – 1 cup
Water – just under 2 cups
Salt – ½ tsp
Ghee – 1 tsp (optional)
Step 1: Prepare the Base
“In a heavy-bottomed vessel or non-stick pan, add water, salt, and 2 teaspoons of ragi flour. Mix well to avoid lumps.”
Step 2: Boil
“Switch on the flame and bring it to a boil. Keep stirring continuously until the mixture turns into a smooth paste.”
Step 3: Add Remaining Flour
“Now, gradually add the rest of the ragi flour. Reduce the flame to low, cover, and let it cook for 2–3 minutes.”
Step 4: Stir & Cook
“Using a strong wooden stick (mudde kallu), stir vigorously until smooth and lump-free. Cover again and cook for 5 minutes on low heat.”
Step 5: Shape Mudde
“Wet your hands with water or ghee, scoop portions of the hot mixture, and roll into round balls.”
