Recipe 109/365 - ginger cake.
My husband got this recipe from his friend at work - It is his nan's traditional recipe and he asked us to give it a try. It is a bit different to make, you will doubt yourself whilst making it, but trust the process as the end result is worth it! It is one of the best cakes that I have ever had. Perfect amount of ginger, so soft and so moist. Excellent for teatime!
Recipe:
225g self raising flour
128g margarine
85g caster sugar
170g golden syrup
1.5 tbsp ground ginger
375ml milk
1.5 level tsp bicarbonate of soda
1) rub the margarine into the flour until it resembles breadcrumbs.
2) stir in the sugar, ground ginger and golden syrup until combined. Use your hands to make this step easy as it will take some time to combine into a soft dough.
3) make a well in the centre of the dough and set aside for later use.
4) heat the milk in a pan until just boiling, then remove from the heat. Add in the bicarbonate of soda - it will foam up.
5) pour the foaming milk into the centre of the soft dough and gently fold everything together to preserve the air bubbles. This will take some time.
6) pour the runny batter into a lined and greased 2 lb cake loaf tin.
7) bake in a preheated oven at gas mark 4 for
60-75 mins in total. At 30 mins, remove the from oven and loosely cover with foil to prevent over-browning.
8) check if cooked from the centre and leave to cool for 10-15 mins and then transfer to a wire rack.
