✨ Recipe 👇🏻 Soy-Marinated Chicken Legs, Rice & Peas
✨ Quick Recipe Breakdown 👇🏻
Wash rice in cold water until the water runs clear
(I’m using long-grain white rice - not sure basmati behaves the same)
Add washed rice to a deep baking dish
Add double the amount of water to rice
Add 1 small red onion, roughly chopped
Add 1 stock cube
Add ½ t turmeric
Add ½ t dried sage
Add ½ t cumin
Add ½ t mild chilli powder
Add ½ t dried rosemary
Add ½ t fennel seeds
Add 2 heavy pinches of salt
Add 2 handfuls frozen peas
Give it a mix

In a bowl mix
2 t light soy sauce
2 T oyster sauce
1 t rice wine vinegar
1 T sesame seeds
Add chicken and coat well
(I’m using chicken legs - you can use other cuts, just be mindful they won’t take as long to cook)

Place the rice dish on the bottom rack of the oven
Place the chicken on a rack over a tray
Put everything into a 200°C / 400°F / Gas Mark 6 oven
Cook for 45 minutes
(or until the chicken is fully cooked)
Remove from the oven
Use a fork to fluff the rice

👩🏼🍳 A Few Wee Tips & Notes 🔪
The rice needs at least 45 minutes in the oven
Chicken breast or thighs will cook faster — check them early
Long-grain white rice works great here, basmati may behave differently
My chicken was done before the rice had fully dried, so I rested the chicken on the counter for 10 minutes and popped the rice back into the oven to drive off excess moisture
