Ingredients:
3 cups all-purpose flour - extra for dusting
2 eggs
1 tsp salt
1/3 cup sugar - if you like your rolls less sweet, use less (use minimum of 2 tbsp)
2 1/4 tsp yeast
4 tbsp butter, melted
1 cup milk, warm
1 tsp cooking oil
Directions:
To a small bowl, add in the warm milk, sugar and butter. Give this a gentle mix. Make sure you milk is only warm, not hot. If it's hot it will kill the yeast, causing your rolls not to rise. If you can stick your pinky in the milk mixture and be not too hot, that's the perfect temp. Add in the yeast and give everything a good mix.
Set the yeast mixture off to the side for 5 minutes.
To a big mixing bowl, add in the flour. Then, remove roughly a 1/4 cup of that same measured out flour from the mixing bowl and add it to the yeast mixture. Even if it hasn't been a full 5 minutes, add it in anyway. Using a whisk, mix in that quarter cup of flour that was added to the yeast mixture, then set it off to the side to resume that 5 minutes.
Back to the flour in the big mixing bowl, add in the salt and give it a mix.
After 5 minutes, add in the eggs to the yeast mixture and combine. Once combined, add the yeast mixture to the flour. Grab a spoon and mix everything together until combined.
To a floured work surface, dump out the dough. It will be rather sticky at this point, so be sure to have extra flour on hand to flour your hands and work surface as needed. Knead for 5 minutes.
Then, gather up your dough, over your mixing bowl, drizzle on a little bit of oil. I used olive oil, but you can use whatever cooking oil you prefer. Rub down the inside of the bowl, put the dough ball back in the bowl, cover with a towel and let it sit for 1 hour in a warm place. If you don't have a warm place, heat up your oven just enough for it to be warm, but not hot! The yeast needs warmth to work it's magic, otherwise it won't do anything.
After 1 hour, gather up your dough and cut it in half. Take a half, and cut it into 3 sections, then cut each section in half. You should have 6 pieces. Do the same to the other original half. You should now have 12 pieces.
Grab 1 piece of dough and gather it up with your fingers, pulling the dough into a nice round ball. Pat the top with a little bit of flour and place in a 9x13 inch baking dish. In the video, I didn't grease my dish. You don't need to, but if you want to that's totally fine.
Once all 12 dough balls are shaped and in the dish, cover again for 1 hour in a warm place. After 1 hour your dough balls should have doubled in size.
Into a preheated oven at 350 degrees, uncovered, for 20-25 minutes, depending on your oven and how dark you prefer the tops of your rolls to be. Brush with a little melted butter and enjoy!!
