***Ingredients:
Pork belly - 500g
Shaoxing wine
Star anise
Cinnamon stick
Ginger
Scallion
Mandarin peel
Herbs
Bean sprouts
Chilies
Palm Sugar
Garlic
Soy Sauce
Shrimp paste
Tamarind paste/concentration
Lime juice
Fish Sauce
Cooking oil
***Instructions:
1. 500g pork belly cut into 1-inch cubes and skin removed
2. In a pot, bring water to a boil. Add in star anise, cinnamon stick, ginger, scallion, mandarin peel, Shaoxing wine, soy sauce, and palm sugar.
3. Add the pork belly into prepared stock and cook for 2.5 hours by simmering on low heat
4. In a frying pan, add cooking oil and stir in minced garlic
5. Add in 1 tsp shrimp paste, Tamarind concentration, sate chili paste, and palm sugar
6. Toss in the pork belly and cook for another 5-7 minutes
7. In a mixing bowl, put the herbs, bean sprouts, and chilies and toss through the fish sauce and palm sugar to make the salad
8. Lay the salad nicely on top of the pork belly and serve immediately
