Basanti Pulao recipe or mishti pulao is a famous sweet yellow rice pulao recipe in Bengali. Basanti means yellow colour and as the colour of rice in this recipe is yellow so it is called Basanti Pulao. Its usually made with basamati rice, normally, Gobindobhog rice.
Normally this is served as bhog to the god idols during Durga
puja festival and hence is made as pure vegetarian rice recipe. However, at home it can be served with many dishes like Aloo dum, kosha mangsho, fish kalia, Paneer dalna, etc. Its very easy to make and usually is sweet in taste. Moreover, one can adjust the taste according to their taste.
In this recipe I have used Lemon juice but that is completely optional and it DOES NOT affect the taste. Hope you all like the way I make this in my home kitchen.
