Steamed brown sugar cake
Ma lai gao, or ma lai go (马来糕)
Apparently named “malay cake” but I’ve only ever seen this cake in regards to Hong Kong dim sum food.
One of the easiest cakes. Hard to mess up because the baking powder gives lift if the eggs don’t work, and the steaming method makes it practically impossible to get a dry cake. It’s delicious, not too sweet, and has a nice subtle flavor. No oven required!
Ingredients:
3 eggs
1/3 cup evaporated milk or milk and 1 tbsp cornstarch
3/4 - 1 cup brown sugar
4 tbsp oil
1 tsp vanilla extract
1 cup all purpose flour
4 tbsp cornstarch
3.5 tsp baking powder
Pinch of salt
Oil for greasing
Directions:
Mix eggs until light in color, approx three minutes.
Add sugar, oil, vanilla and milk.
Mix together dry ingredients and fold in to the egg mixture in batches.
Let the batter rest while you grease and line the pans. Any bowl or pan or bamboo steamer works fine. Anything that will fit into your steaming contraption or a pot.
Let the batter rest in the pans while you set up your steamers.
I always steam by having a pot with a little water, bringing the water to a boil, and then inserting a wire rack to prop up my bowl.
Steam on medium for a few minutes and then turn down to low. Cooking time will vary based on what kind of container you’re using. Mine went about 35 minutes but go until a toothpick inserted comes out clean. It can’t really be overcooked that badly because it’s steamed and retains its moisture.
Serve warm or cold!
