This is a lovely soup, so quick to make with inexpensive ingredients.
2-3 medium Carrots
2-3 medium Parsnips
1 Stock pot or Stock Cube, Vegetable or Chicken, your choice
1 Ltr Water
1 Teaspoon of Ginger
Salt and Pepper
1 Medium Onion
1 tablespoon Garlic - granules or Cloves
Cream of Yoghurt to add when reheating - you can add as much or as little as you like, whatever your preference is, or leave it out all together !
If you find that the soup is too thick for your liking, simply add more water till you are happy.
Ignore the stock pot or stock cube instructions for water quantity, just pop it into a litre of water, for adding to the soup.
