With Summer coming in HOT, I thought it was the perfect time to bake Mermaid Marshmallow Pie! This is a super light and fluffy pie with coconut, marshmallows, and YUM!

INGREDIENTS:
CRUST:
🥧 One Box Betty Crocker Pie Crust Mix

MARSHMALLOW PUDDING:
🥚 2 Egg Whites (room temperature)
🍮 1 Teaspoon Gelatin Powder
💧 1/4 Cup of Water
🍬 1/2 Cup Sugar

COCONUT WHIPPED CREAM:
🥛 1+1/2 Cups Heavy Whipping Cream
🥥 1 Teaspoon Coconut Extract (or in my case, Rum extract!)

TOPPING:
♥️ 1 Bag FUNMallows
🥥 1 Cup Sweetened Coconut
