Caramelized onions:
3 large yellow onions, thinly sliced
2 tbsp unsalted butter
2 tbsp olive oil
Pinch of salt
Optional: 1–2 tbsp vinegar

Pickled jalapeños:
6 fresh jalapeños or Fresno, sliced into rings
1/2 cup (120ml) white vinegar (or apple cider vinegar for a touch of sweetness)
1/2 cup (120ml) water
1 tsp salt
1/2 tbsp sugar (helps balance acidity)
2 cloves garlic, smashed
3–4 whole black peppercorns (optional)

Dijonnaise recipe:
1 whole free-range organic egg
1 tbsp water
2 medium garlic cloves smashed and roughly chopped
1 1/2 tbsp dijon mustard
1/2 tsp plus 1 little pinch Maldon salt
2 tsp white wine vinegar
1 1/2 tsp fresh lemon juice (not that bottled BS)
1 cup (240ml) avocado oil
2 tbsp extra virgin olive oil
