Hurda/ponkh thalipith
Hurda or tender Jowar or ponkh is winter delicacy mostly available in December and January
Hurda thalipith is very easy yet very nutritious recipe, its high in fibre, vegan and gluten free
Ingredients:
Jowar flour- 50 g ( half katori)
Bajra flour - 50 g ( half katori)
Besan/ chickpea flour- 50 g ( half katori)
Or thalipith bhajni flour -150 g
Hurda/ ponkh -100 g ( one katori)
Ginger/ garlic/ green chilies as per your preference
Salt
Ajwain/carrom seeds -1 pinch
Sesame seeds-1 tsp
Cumin seeds-1/2 tsp
Coriander seeds-1 tsp
Turmeric powder
Red chilli powder
Chopped onion-100 g
Chopped coriander leaves
Oil for shallow frying-1-2 tsp
Method:
Wash hurda with water and drain and dry
Dry roast cumin and coriander seeds and cool them.
Roast hurda for 2-3 mins, it will look little shiny , then cool it
Grind cumin ,coriander seeds coarsely
Remove this powder in a plate and in the same grinder add ginger, garlic, green chilli and grind coarsely.
Remove this paste in a plate and in the same grinder add roasted Hurda grains and grind coarsely. You can keep aside a spoonful of Hurda for garnish
Now mix everything together flour, salt, ground cumin coriander powder ,ginger garlic chilli paste, Hurda , chopped onion, chopped coriander leaves, red chilli powder,turmeric powder etc
Knead soft dough by adding little water at a time, it should not be tight
Take a clean cloth and wet it with water, squeeze excess water
Make small balls of dough and spread on cloth not too thin or thick
You can use butter paper/ plastic sheet too , you have to grease it with butter or oil before spreading thalipith
Make small holes to add oil droplets while roasting
Sprinkle sesame seeds and hurda grains on top
Brush oil on nonstick pan or cast iron pan
Lift this thalipith along with cloth and put thalipith side on the pan
Press a little and remove cloth slowly
Nicely roast thalipith from both sides
Enjoy with ground nut chutney and curds/ homemade white butter
