Here's the White Lasagna Recipe: 🥑 4 - 6 Portions
Chicken Lasagna with Avocado and a Southwestern Twist
Ingredients:
1 medium onion, finely chopped
1 jalapeño, finely chopped (seeds removed for less heat, if desired)
2 garlic cloves, minced
1 teaspoon cumin
1 1/2 cup salsa verde
1 cup sour cream
Juice of 1/2 lemon
Juice of 1/2 lime
1/4 cup fresh cilantro, chopped
2 cups cooked chicken, shredded
1 ripe avocado, sliced
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
6-8 lasagna noodles (no-boil or pre-cooked)
Salt and pepper to taste
Avocado oil for cooking
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Chicken Filling:
🧑🏻🍳Heat a little avocado oil in a large pan over medium heat.
Add the chopped onion and jalapeño, cooking until they soften, about 5 minutes.
Add the minced garlic and cumin, and cook for another minute until fragrant.
Stir in the shredded chicken and cook for a few more minutes, allowing the flavors to meld together.
Season with salt, pepper, lemon juice, and lime juice. Mix well and set aside.
Prepare the Sauce:
🧑🏻🍳In a medium bowl, mix together the salsa verde and sour cream until well combined.
Add the chopped cilantro and stir to combine.
Adjust the seasoning with salt and pepper if needed.
Assemble the Lasagna:
🧑🏻🍳In a baking dish, spread a thin layer of the salsa verde and sour cream mixture on the bottom.
Place a layer of lasagna noodles over the sauce.
Spread half of the chicken mixture over the noodles.
Arrange half of the avocado slices over the chicken.
Sprinkle a generous amount of shredded cheese over the avocado.
Repeat the layers: noodles, chicken mixture, avocado slices, cheese, until you use all ingredients.
Finish with a final layer of lasagna noodles, topped with the remaining sauce and cheese.
Bake the Lasagna:
🧑🏻🍳Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Serve:
🧑🏻🍳Let the lasagna cool for a few minutes before slicing.
Garnish with extra cilantro if desired and serve warm.
This version will give you a deliciously creamy and flavorful lasagna with the added richness of avocado!
