Xarém (or xerém) is a recipe from the Algarve, from the Olhão area, with Moorish origins. Usually it is made with cockles or clams; I do it with anything I want. This time it was with shrimp.
Corn flour is obtained from grains that have been ground in the Molineta (natural millstone inherited from the Romans). Xarém is made from this poorly ground corn, also known as corn semolina.
Xarém with Shrimp can be served as a starter or as a main dish.
👉🏼 INGREDIENTS (FOR 2 PEOPLE):
• 250 g shrimp (fresh or frozen)
• 100g corn semolina
• 1 small onion
• 2 cloves of garlic
• 2 cl white wine
• 750 ml of water
• olive oil
• salt
• fresh coriander
