Ingredients:
1 lbs starchy potatoes
10 small ripe apricots, small plums or prunes are a variation
10 sugar cubes
6 oz all purpose flour (more or less, depending on moisture content of the potatoes)
A big pinch of salt
2 tbs soft butter
1 egg
For Serving:
1 tbs butter
1/2 cup regular breadcrumbs (buy the good stuff, not the progresso version with 10 ingredients or make your own by blending dried white bread)
A 2:1 mix of sugar and powdered cinnamon - about a tablespoons worth (more if you like it sweeter)
and as much melted butter as your heart can handle
Method:
➡️ boil the potatoes, let them cool until you can handle them, peel them and run them thru a potato ricer
➡️ If you don't have a potato ricer you can use the fine side of a box grater. Make sure there's no potato lumps in the result
➡️ Let the potatoes cool down until luke warm
➡️ In the meantime, wash the fruit and remove the stone. If you can, leave the two halves connected on one side, that makes shaping easier
➡️ Mix the potatoes with half the flour, the egg and the salt
➡️ Don't overmix, do not use a machine for this. Potato dough tends to turn slimy when overworked.
➡️ The result should be a little like soft playdoh. Incorporate more flour until the dough is just slightly sticky
➡️ Bring a large pot with lightly salted water to a slow simmer
➡️ Stick a sugar cube into the fruit (instead of the stone) and coat with about 3/8th to 1/4 layer of the dough
➡️ Make sure there's no holes in it and it's firmly together. If you have or suspect a hole, just patch it with a bit more dough
➡️ Dust with flour and set aside. Continue with the remaining dumplings
➡️ Carefully submerge into the simmering water.
➡️ The dumplings will sink to the bottom initially, but will rise to the top after a few minutes. From that point on, continue to barely simmerfor 20 minutes
➡️ In the meantime melt a good amount of butter and keep warm
➡️ In a pan melt a teaspoon of butter and roast the breadcrumbs until golden brown. Careful, they tend to burn quickly once they start browning, so pay attention and stir often.
➡️ Assemble on a plate by breaking the dumplings open, pour some melted butter over them, top with the breadcrumbs and sprinkle with cinnamon sugar to taste
➡️ Enjoy!
