A simple but essential method to clean goat or lamb trotters before cooking. Proper cleaning removes tiny hairs and any strong odor, giving you a fresh base for any paya recipe.
Method
Wash and rinse the trotters thoroughly under running water to remove surface dirt.
Sprinkle wheat flour over the trotters. Gently massage and rub the flour all over, taking care as small bones can be sharp. The flour helps pull out tiny hairs and trapped grime.
Wash off the flour with fresh water until the water runs clear.
Inspect each piece. If any hairs remain, repeat the process once more.
Place the cleaned trotters in a colander to drain before marinating or cooking.
