In this video, I head out to Kalamalka Lake, BC for a December shore-fishing session targeting whitefish. Winter shore fishing can be tough, but I break down exactly how I catch whitefish from shore, even in cold conditions.
After the catch, I take the fish home and walk you through my maple-smoked whitefish recipe step by step — from cleaning and brining to smoking and the final result. If you’re into catch-and-cook fishing, this one’s for you.

Recipes
Brine overnight (12-24 hrs) in a cool place in:
8 cups cold water
1/2 cup Kosher Salt
1 cup brown sugar
1 tbsp black pepper corns
1 tsp onion powder
2 bay leaves
Form Pellicle (2-4 hrs) in cool place:
Rinse fish thoroughly and dry with paper towel
Place skin side down on a rack and place in fridge
Smoke
Pre-heat smoker to 180C
Smoke fish (apple or maple wood) for 3-4 hrs
Until fish internal temp reaches 140C
Option after 2 hrs of smoking apply light coat of pure maple syrup
