Sturgeon with Spring Peas and Carrot-Fennel Sauce. After you master this you'll be thinking: Who needs to go to restaurants?

FOR THE BUTTERMILK & BUTTER:
1 pt heavy cream
FOR THE CARROT-FENNEL SAUCE:
5 carrots, thinly sliced
1 onion, sliced
1/2 fennel bulb, thinly sliced
1/2 stick butter, cubed
1/4 cup chicken stock
2 cups buttermilk
FOR THE PEAS:
2 slices bacon, cubed
6 asparagus, sliced
1/2 cup of peas
1/4 cup chicken stock
1 tbsp butter
FOR THE STURGEON:
1 tsp grapeseed oil or sunflower seed oil
3 fillets of sturgeon (or protein of your choice)
1 tbsp butter
