The weather is warmer and the summer season is approaching. I want to show you some of my essential recipes and dishes I like to make for the carne asadas and backyard barbecue parties. I will show you one of my favorite marinades for tenderizing cheaper cuts of beef. I will also show you some of the best bbq sides I like to make. Summer barbecues and carne asadas are upon us and these easy recipes are a must try!

Meat Marinade INGREDIENTS
2 lbs thin beef for milanesas or bistec
12 fl oz beer
juice of 2 to 3 medium limes
1 medium onion
fresh cilantro
4 clove of garlic
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 1/2 tsp salt
1 tsp cracked black pepper
Deviled Eggs Ingredients
9 large eggs
5 Tbsp mayonnaise
1/2 tsp Dijon mustard
1/8 tsp smoked paprika
salt and pepper to taste
I also like to add 1 Tbsp Miracle Whip if I have it
Mexican Macaroni Salad INGREDIENTS
14 to 16 oz small to medium elbow macaroni
add 1 1/2 Tbsp chicken bouillon powder to boiling water
16 oz smoked or pressed deli ham
1 to 2 scallions
1 celery stick
1/2 cup pickled carrots
11 oz can of corn (drained)
start with 1 cup mayo made with lime
start with 1/2 cup sour cream
1/3 cup pickling liquid from carrots
2 tsp Maggi seasoning sauce
salt & pepper to taste
Mexican Red Rice INGREDIENTS
1 cup (160 g) long-grain rice
small piece of onion
1 to 2 cloves garlic
1/4 tsp to 1/2 tsp ground cumin
1/4 tsp black pepper
1 Tbsp (10 g) chicken bouillon powder
4 to 5 oz (120 to 140 ml) tomato sauce
2 cups (473 ml) water
Charro Beans INGREDIENTS
1lb pinto beans (pre-soaked)
12 oz bacon
1 small onion
2 cloves of garlic
3 Roma tomatoes
fresh cilantro
1 Tbsp tomatoes chicken bouillon
salt to taste
3 to 3 1/2 cups water
5-quart pot
QUICK Charro Beans
(2) 15 oz cans of cooked pinto beans
6 oz bacon
1 jalapeno
1 large Roma tomatoes
1/4 piece of a medium onion
2 to 3 cloves garlic
1 Tbsp chicken bouillon powder
salt and pepper to taste
8 fl oz (236.5 ml) water
Potato Salad INGREDIENTS
2 1/4 lbs Russet potatoes
5 hard-boiled eggs
12 oz mayonnaise
1 Tbsp coarse ground mustard
1 Tbsp sweet pickle relish
3 Tbsp finely chopped celery
2 Tbsp finely chopped red bell pepper
1/4 tsp paprika
1 tsp sugar
salt and pepper to taste
Avocado Dip INGREDIENTS
2 small avocados
1/3 cup of pickled carrots / chopped jalapeños
1/4 cup of pickling liquid from carrots
1/2 cup Mexican table cream
1 Tbsp fresh lime juice
3/4 cup to a cup of water
a handful of fresh cilantro
salt to taste
