Akha Masoor with Anda (Whole Brown Lentils with Egg) is a protein-packed, smoky, and deeply comforting dish popular in Kolhapur and across Maharashtra. It’s essentially a spicy lentil curry topped with fried or boiled eggs.
Preparation
1. Cook the Lentils
Pressure cook the soaked masoor dal with 2.5 cups of water, a pinch of salt, and a half-teaspoon of turmeric.
Time: Usually 3–4 whistles. You want them soft but not turned into mush.
2. While the dal cooks, peel your boiled eggs.
Prick them with a fork or make small slits. Sauté them in a pan with a pinch of haldi powder for 2 minutes until the skin gets slightly crispy and golden. Set aside.
3. The Masala Base
Heat oil/ghee in a heavy-bottomed pan. Add cumin seeds, dry red chilli,
Add onions and sauté until deep golden brown (this is where the flavor lives).
Stir in the green chilies; sauté for another minute.
Add the tomatoes and all pudina, coriander. Cook fora while.
4. Combine and Simmer
Pour the cooked dal into the masala. Adjust the consistency with a little hot water if it’s too thick.
Gently slide in the sautéed eggs.
Sprinkle garam masala and a handful of fresh coriander.
Cover and simmer on low heat for 5 minutes so the eggs absorb the spicy gravy.
Serving Suggestion
This dish is best served hot with Jeera Rice or buttery Pav (bread rolls). A side of sliced onions with a squeeze of lime really cuts through the richness.
