This restaurant-style chicken is thickly coated in a rich, spicy masala — not a gravy, but a perfectly clingy masala-coated fry. Made without soy sauce or garam masala, this recipe focuses on fresh garlic, green chillies and curry leaves for that authentic Hyderabadi flavour.
It’s perfect as a starter, side dish or even with rumali roti. Simple ingredients, powerful taste and no artificial gravy — just pure spicy masala goodness.
Ingredients :
Marination :
500 gms Chicken Boneless (medium-sized cubes)
1 tbsp Ginger Garlic Paste (adrak-lehsun paste)
1 tsp Red Chilli Powder (use as per your diet restrictions)
1 tsp Kashmiri Red Chilli Powder
¼ tsp Turmeric Powder
½ tsp Black Pepper Powder (kali mirch powder)
2 pinch Red Food Colour (optional)
1 tbsp Lemon Juice
2 tbsp Corn Flour
1 tbsp Rice Flour
1 Egg White (ande ka saphed hissa)
½ tsp Salt (adjust as per taste)
2 tbsp Water
Other Ingredients :
100 ml Cooking Oil (for shallow frying)
2 to 3 tbsp Oil (used the oil in which the chicken was fried)
8 gms Ginger (finely chopped)
30 gms Garlic (finely chopped)
2 sprigs Curry Leaves
2 to 3 Green Chillies (deseeded and slit into half)
1 small size (50 gms) Onion - finely chopped
4 tbsp Curd (whisked smooth)
½ tsp Red Chilli Powder (use as per your spice tolerance)
1.5 tsp Kashmiri Red Chilli Powder
¼ tsp Black Pepper Powder (kali mirch powder)
¼ tsp Cumin Powder (jeera powder)
¼ tsp Sugar (to balance the flavour)
¼ tsp Salt (adjust as per taste)
2 to 3 tbsp Water (used after rinsing the bowl)
1 sprig Curry Leaves
¼ tsp Kewra Water (optional)
2 to 3 tbsp Coriander Leaves (chopped)
Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
