SIMPLE JAM RECIPE (bookmark this 😍)
This is my go-to recipe for making delicious jams with low-pectin berries like blackberries, raspberries, and strawberries.
It takes well under an hour to make and only includes three ingredients—berries, sugar, and lemon juice for the right amount of acidity, and to make it set.
7 cups (1000 g) berries
5 cups (1000 g) white granulated sugar
¼ cup fresh lemon juice
(makes three pints - I made a double batch in the video)
1. Put all the ingredients in a pot, stir, and turn the heat onto medium high.
2. Bring to a boil while stirring and squishing the berries with a potato masher.
3. Reduce the heat but keep the mixture at a rolling boil until the setting point is reached.
4. The setting point is at 220F/105C or until the jam begins wrinkling up when you drip some on a frozen plate and push at it with your finger.
5. Turn the heat off and allow the jam to cool for a couple of minutes. Then skim any foam off.
6. Pour the jam into warm, sterilized jars leaving just ¼” (6 mm) headspace. Seal with lids.
7. Water bath jams for 10 minutes (if under 1000 ft)
8. Remove and allow to cool overnight.
9. Test to make sure that the lids have sealed and then put the jars in storage. They’re good for at least a year!
