About the Chef:

ENCHILADAS HUEVOS VERDES
Makes 6
INGREDIENTS
cooking spray
¼ cup frozen chopped spinach, thawed & squeezed dry
¼ cup chopped cooked broccoli
½ cup chopped onion, sautéed
½ cup chopped green pepper, sautéed
2 cups shredded Monterey Jack cheese
6 flour tortillas
6 large eggs
½ salsa verde
¼ cup chopped fresh cilantro
DIRECTIONS
1. Spray an 8-inch round baking dish or pan that fits inside the air fryer with cooking spray.
Combine the spinach, broccoli, onion, green pepper, and half of the cheese in a bowl and mix.
2. Divide the mixture evenly between the tortillas and roll the tortillas tightly.
3. Place the tortillas in the prepared dish.
4. Whisk together the eggs, salsa, and cilantro in a separate bowl. Pour the mixture evenly over the tortillas.
5. Cover the dish with foil and place in the air fryer. Cook at 350° F until the eggs are cooked (15–20 minutes).
6. Carefully remove the foil and sprinkle the remaining cheese on top. Cook for 5 more minutes.
BLOODY MARY: Mix 1 shot vodka, 3 oz Clamato® juice, 1 tsp. lemon juice, 2 dashes Worcestershire sauce, 2 dashes red pepper sauce, ¼ tsp. celery salt, ¼ tsp. ground black pepper, and 1 tbsp. horseradish and pour over ice. Serve garnished with a celery stick, olive, and pickle spear.
