Cannabis is widely considered within the industry to have a broad diversity of flavors and aromas. Yet much of our understanding of complex and nuanced cannabis aromas tends to revolve primarily around terpenes and terpenoids. Cultivars such as OG Kush, Gelato, and Apple Fritter have often been described to have a “skunky gassy” aroma that is extraordinarily pungent. However, this aroma cannot be attributed to known terpenes or terpenoids which sparks the question, what compounds cause this aroma? To answer this question, we constructed a study utilizing multidimensional gas chromatography coupled with time of flight mass spectrometry (TOF-MS), sulfur chemiluminescence detection (SCD), and flame ionization detection (FID). A wide variety of cannabis flowers with varying pungencies of gassy aroma were analyzed including the iconic gassy cultivars OG Kush and Bacio Gelato as well as non-gassy cultivars like Black Jack. What was discovered was a family of sulfur compounds in cannabis that contain a prenyl (3-methylbut-2-en-1-yl) functional group that correlates with the gassy aroma characteristics of cannabis. I will discuss this newly discovered class of compounds in cannabis coined “Cannasulfur compounds” as well as the implication this may have for cultivators, cannabis brands, consumers, and the potential medicinal impacts for cannabis.
