Banana Justino is a Liquid Intelligence recipe from Dave Arnold that requires the use of a centrifuge. By using a centrifuge you'll get a clearer result and a higher yield. But what about us mere mortals? Can we experience a delicious Banana Rum without a Spinzall? I think so! The results are not crystal clear but the yield is decent and the taste is wonderful.

You might wonder if the Pectinex Ultra SP-L is necessary and unfortunately, I have not done a side-by-side comparison of this method vs. the same without Pectinex. I don't really want to risk the rum, but most likely the result would be a rum with less banana flavor.

Several coffee filters are needed for this one and of course, some time standing around waiting for it to filter. In fact, when I asked Garret Richard for advice he said it just needed Pectinex and patience.

2 overripe bannans
10 ml Pectinex Ultra SP-L

Scale this recipe up or down with 1 banana per 250ml of booze. Pectinex should be 1-3% by weight.
