Roti is everythingggggg and it's my favourite food so I had to make an in-depth video showing you guys wah gwan. I'll upload a detailed video making my curry chicken cause mine is REALLY good and I wanted the focus of this video to be the roti.
I hope I can inspire you guys to cook more, get creative and be confident in the kitchen! Roti can be intimidating but I hope this video gives you the confidence to TRY IT YOURSELF!

RECIPE:
4 cups of flour (unbleached if possible)
2 tsp baking powder
1 tsp salt
2 tsp brown sugar
1 cup of lukewarm water (begin by adding 3/4 cup and add more AS NEEDED)
extra bench flour
5 tbsp of softened butter/margarine/ghee
5 tbsp oil
*mix the oil and butter together to use for the filling as well as cooking the roti.
-Combine all dry ingredients thoroughly.
-Add water and combine into shaggy dough. Knead dough careful not to overmix it (dough should still be a bit shaggy but soft)
-Cover entire dough ball with oil, cover bowl with kitchen towel and let rest 10-20 minutes,
-Separate dough ball into smaller sections (comfortably makes 8 paratha), and roll out thin. Spread filling on dough.
-Slice the dough from the centre to about the 4 o'clock mark, and begin rolling up dough into a cone.
-Tuck the end in and pinwheel up the cone. Let rest for 10-20 minutes.
-Flatten out each pinwheel by hand, roll it thin with a rolling stick careful not to make any holes and set aside until ready to cook.
-Spread the oil/butter mixture on a tawa or griddle over medium heat and cook until each side is slightly puffed with golden brown spots.
-Buss up the paratha with 2 wooden spoons/paddles/ any other wooden implement you have.
-Steam roti in a bowl lined with parchment paper. Cover the top with parchment paper and a towel to prevent form drying out.
-Serve and enjoy!
REHEATING TIP
coat the roti in water, cover and microwave for 30 seconds MAX - this will steam the roti again and keep it form drying out in the microwave.
