Muli paratha is a tasty and wholesome Indian flatbread made using grated white radish (muli) mixed with wheat flour and mild spices. It is especially popular in North Indian households and is best enjoyed hot with curd, butter, or pickle.
Fresh muli is washed, peeled, and finely grated. Since radish releases a lot of water, it is lightly squeezed to remove excess moisture. The grated radish is then mixed with whole wheat flour, green chilli, grated ginger, ajwain (carom seeds), salt, and finely chopped coriander leaves. Using the moisture from the radish, a soft dough is kneaded without adding much water.
The dough is divided into equal portions and rolled gently into round parathas using dry flour. Each paratha is cooked on a hot tawa until brown spots appear on both sides. A little oil or ghee is applied and the paratha is roasted till it becomes crisp and golden.
Muli paratha is nutritious, easy to digest, and rich in fiber and vitamins. It makes an excellent breakfast or lunch option when served with fresh curd, white butter, or homemade chutney.
