The cuisine of Mughals or the Timurids in India underwent a lot of change. It was not just Samarkand or Uzbek cuisine or Afghani cuisine. Even from the time that Babur came into India, the cuisine took on influences from all over Mughal India.
There are stories where each grain of rice was apparently wrapped in foil (!!).
The royal Hakim played a very important role in the royal meals. The Hakim supervised the food, and since, he was privy to the Emperor's health, he checked the balance in proportions of the food items as per the Emperors diet requirement. Of course, there were several checks for the presence of poison.
When Shahjahan had been imprisoned by Aurangzeb and was confined to the Agra Fort. It is believed that Shah Jahan was given a choice to select one food item that he would eat for each day for the rest of his life. He picked Chholey/ Chick Pea because he thought (and rightly so), that it was one of the most versatile foods, it could be cooked in so many ways. (I find this episode rather poignant, because Shah Jahan as a prince and an emperor, had access to the most lavish food spreads).
It may surprise many of us that the homey Dal Chawal was a 'pasandida' meal of many emperors. Aurangzeb is known to have a very frugal diet, but it was Muhammad Mu'azzam or Shah Alam, who ascended the throne after Aurangzeb as Bahadur Shah-I was really fond of Dal Chawal
