Strategy:
Use Latenna the Albinauric Summon as soon as you enter the arena. My Latenna was +7.
Astel will almost always focus on you, so just stay against the wall while Latenna keeps hitting it, and it'll just do three attacks:
a) If it hits you with its tail: use a shield, you'll take no damage
b) If it shoots a purple beam: roll or hide behind a rock
c) If it shoots a rain of meteorites (second phase at half health bar): roll away
If Astel starts focusing on Latenna just shoot a long-range attack and it'll focus on you again. I used Rock Sling to keep its attention on me and do some damage, it doesn't matter if you miss.
It's important to keep your distance and stay against the wall, trying to put the entire arena between you and Astel (at one point I got too close so it teleported near me and I had to run from its grabbing attack, but you can avoid that).

Astel, Stars of Darkness is a Field Boss in Elden Ring. It is found in Yelough Anix Tunnel in the Consecrated Snowfield.
