I love mushroom risotto and this is my take on how to make it perfectly delicious and creamy! If you followed along with me, let me know how it turned out!
Ingredients:
-2 cups of arborio rice
-Mushrooms (Portabello, Cremini, or White)
-Chicken broth (at least 5 cups)
-Milk (1 cup)
-Olive oil (3 tbsp.)
-1 shallot (diced)
-White cooking wine (1/2 cup)
-1 tbps butter (room temperature)
-2 or 3 green onions OR chives (chopped)
-Grated parmesan cheese
-Salt & pepper
