Ingredients
• 1 tsp ghee (clarified butter)
• 4–5 garlic cloves, crushed
• 1 small piece of ginger, chopped
• 2 green chillies, slit or chopped
• ½ onion, chopped
• 1 small tomato, chopped
• ½ tsp turmeric powder
• Salt to taste
• A pinch of black pepper
• A handful of fresh moringa leaves (drumstick leaves)
• 1½ to 2 cups water


Method
1. Heat Ghee
In a pan, heat 1 teaspoon of ghee.
2. Sauté Aromatics
Add crushed garlic, chopped ginger, and green chillies. Sauté for a minute until fragrant.
3. Add Onion & Tomato
Add the chopped onion and sauté. Then add chopped tomato and cook until soft.
4. Spice it Up
Sprinkle turmeric powder, salt, and a pinch of black pepper. Mix well.
5. Add Moringa Leaves
Add a handful of washed moringa leaves. Stir and cook for 2 minutes.
6. Pour Water & Boil
Add 1½ to 2 cups of water. Let it come to a boil and simmer for 5–7 minutes.
7. Blend (Optional)
You can blend the soup if you prefer a smoother texture. Otherwise, enjoy it as is.
8. Serve Warm
Pour into a bowl and serve hot.
