This is a typical Mexican seafood salad full of spicy flavours!

INGREDIENTS - SERVES 2
200g mixed seafood, fresh or frozen.
4 tbsp tomato ketchup
1 tbsp Mexican Hot Sauce
A big pinch of cumin
½ small onion, chopped
1 tbsp lime juice
2 tbsp freshly chopped coriander
Salt
Pepper
Avocado to serve
INSTRUCTIONS
Mix together the ketchup, hot sauce and cumin.
Put the defrosted seafood in a bowl together with the onion, lime juice and coriander.
Season well. Add about three quaters of the sauce and mix well.
Split into two bowls and drizzle the remaining sauce on top. Chill in the 'fridge.
Garnish with chopped avocado rinsed in lime juice to prevent it from browning.
IF USING FRESH SEAFOOD
Heat some fish stock in a pan. Add the seafood in the order of the amount of cooking required. Most small pieces of seafood take a very short time to cook.
Cook for 1 minute, remove the pan from the heat and allow the seafood to finish cooking by standing in the cooling stock.
When the stock has cooled remove the seafood from the pan and, if necessary, shell the cooked seafood.
