Keto Pumpkin Cookies With Cream Cheese Frosting.
1/4 Cup Butter
1/3 Cup Monk Fruit (or sweetener of choice)
1/2 Cup Pumpkin
1 Egg
1 tsp Vanilla
3 Cups Almond Flour
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Cloves
1/8 tsp Allspice
1/8 tsp Ginger
1/2 tsp Baking Powder
1/4 tsp Salt
Cream Cheese Frosting
2 Oz Cream Cheese
1/4 Cup Allulose
1-2 Tbsp Heavy Whipping Cream
Instructions
Preheat oven to 350°
Mix all dry ingredients
Mix together butter and sweetener until creamed
Add in the rest of the wet ingredients and combine.
Mix in the dry ingredients
Place in fridge for a few minutes and then roll into balls and place on cookie sheet.
Bake for 15-17 minutes
At the 15 minute mark gently push the cookies down a little and continue baking
Frosting instructions:
Mix together cream cheese and Allulose
Then slowly add in heavy whipping cream until desired consistency is achieved.
Place in fridge until cookies have cooled completely.
