Ingredients:
10 eggs
350 g wheat flour
300 g sugar
A pinch of salt
1.5 tablespoons baking soda
250 ml kefir
500 ml milk
200 ml odorless sunflower oil
20 g vodka or cognac
Vanilla essence or vanilla sugar to taste
Key secrets:
Vodka or cognac is needed to remove the smell of baking soda, and alcohol also makes the dessert porous, helping to create those famous holes. If you use cognac, it gives the dough a slight caramel flavor, which intensifies when baked for a long time in the oven.
During baking, the alcohol evaporates completely, leaving only the desired structure.
Baba Nyagre is baked for 4 hours, the first 2 hours at 200°C, and then at 100°C for another 2 hours. Do not open the oven door during cooking, and it is advisable to leave the dessert in the oven until it has cooled completely, preferably overnight, or at least for two hours, without opening the oven door.
What to cook in?
A cast iron cauldron is ideal. The walls distribute the heat evenly, which is important for the dough to rise properly.
You can use a thick-walled aluminum or ceramic pot with a lid.
This is a very tasty dessert.
1. Break the eggs.
2. Beat the eggs with a mixer until foamy.
3. Add flour, sugar,
4. vanilla sugar, salt,
5. baking soda,
6. mix everything together.
7. Add kefir.
8. Add the milk.
9. Mix well.
10. Add the sunflower oil.
11. Add the beaten eggs to the mixture.
12. Beat well with a mixer.
13. Add vodka or cognac.
14. This dessert should be cooked in a pot. I have a cast iron one.
15. Grease the pot with pieces of butter. You can also sprinkle flour on top.
16. Pour the mixture into the pot and cover with a lid.
17. Bake in a preheated oven at 200 °C for 2 hours, then at 100 °C for another 2 hours. It is very important not to open the oven door during this time. After turning off the oven, do not open the door for at least an hour; it is better to let the mixture cool completely in the oven.
18. Remove the dessert from the oven. Use a silicone spatula to make it easier to turn the dessert over. Take a wooden board and turn the dessert over.
