Hawaiian Mini Meatloaf
1 pound ground beef
1 20 ounce can crushed pineapple, drained and squeezed
1 cup diced onion
1 cup diced bell pepper
2 cloves garlic
1 cup ground oats or breadcrumbs
1 egg
salt and pepper to taste
Mix together and form into small ovals. Bake at 350F for 50 minutes
To make the sauce
1 cup reserved pineapple juice
1 TBSP corn starch
2 tsp prepared yellow mustard
1/4 cup ketchup
2 TBSP soy sauce
a couple dashes Tabasco to taste
wisk together, gently bring to a simmer stirring often. Once it simmers you can remove from the heat and allow it to cool slightly.
