The BEST Lemon and Poppy Seeds Cheesecake
I've got it! The creamiest, dreamiest cheesecake flavoured with fresh lemon snuggled between a buttery digestive biscuit crust and layers of poppy seeds paste. This is my absolutely favourite cake!
Ingredients:
15 digestive biscuits
50g melted butter
600g cream cheese
½ cup sugar
300ml heavy cream
2 eggs
a splash of vanilla
zest from one lemon
⅓ cup hot milk
⅓ cup sugar
⅓ cup poppy seeds
1 tbsp lemon juice
Base:
》Mix the crushed biscuits with the melted butter and press down firmly using your fingers or a glass. Bake it a 175C for 10 minutes.
Cheesecake Filling:
》Mix the cream cheese with sugar, then add the heavy cream, eggs, vanilla, and zest. Set aside.
Poppy seeds paste:
》In a small bowl, mix together the hot milk, sugar poppy seeds, and lemon juice. Transfer the paste to a piping bag.
》Add the cheesecake filling over the biscuit base, then pipe the paste in circles onto the cheesecake. Using a knife, create those marks shown in the video.
》Bake it at 160C for about 40 minutes.
