Halal Beef Stroganoff Recipe for 4-6 servings
Prep First
1. Prepare Broth: if you have Beef broth OR dissolve 2.5 beef bouillon cubes in 2.5 cups of (600ml) boiling water. Set aside.
2. Boil Water: Fill a large pot with water for wide broad egg noodles and put it on high heat to boil.
3. Slice: Cut 2 lbs beef into thin strips (size of your choice the thinner the better). Slice 2 onions and 2 cups of mushrooms. Mince 3 garlic cloves.
The Cook
1. Sear Beef (High Heat): Heat oil in a large pan. Sear beef in 3 batches (don't overcrowd). 1 minute per side just to brown. Do not salt. Remove beef to a plate.
2. Sauté Veg (Medium Heat): Add 2.5 tbsp butter to the same pan. Add onions (cook 3 mins). Add mushrooms (cook 5 mins). Add garlic (cook 30 secs).
3. Build Sauce:
• Sprinkle 2.5 tbsp flour over veg. Stir for 1 minute.
• Add 1.5 tbsp lemon juice (or apple cider vinegar) and scrape the brown bits off the bottom.
• Pour in your broth, 1.5 tbsp Dijon mustard, and 1.5 tbsp Worcestershire/Soy sauce.
• Simmer for 5 minutes until slightly thickened.
4. Cook Noodles: Drop your egg noodles into the boiling water now. Cook 10 min (or per bag instructions).
5. Finish:
• Turn heat to LOW.
• Stir in 1 cup sour cream until smooth.
• Add beef (and plate juices) back in. Stir and heat for 1 minute. Do not boil.
6. Serve: Drain noodles, add a little butter if you wish and ladle the Stroganoff over the top. Garnish with parsley is optional
