Taste of Tradition: 'Loobia Polo' Harvesting and Cooking in Rural Iran

Beside me, Mohammad, my beloved, tends to our garden, harvesting potatoes that will soon find their way to our table. There's a special joy in gathering nature's bounty, one that fills our hearts with gratitude.
In this episode we make Persian food, Loobia Polo, which translates to mix rice with fresh string beans with Shirazi salad. There are countless ways to create this dish, but the vegetarian version I'm sharing with you today holds a special place in my heart. The flavors are an enchanting blend of tradition and homegrown goodness.

800g of string beans
6 cups of rice
4 carrots
4 medium potatoes
3 spoons of tomato paste
2 fresh tomatoes
Spices:

Turmeric powder
Black pepper
Salt (as you wish)
Cinnamon (a special tip: adding cinnamon to our sauce enhances the flavors)

*Tahdig is a beloved and iconic Persian dish, but it's more than just a dish; it's actually the crispy, golden crust that forms at the bottom of the pot when cooking certain rice dishes. The word "tahdig" in Farsi translates to "bottom of the pot."
