Pressed duck from Normandy made famous at La Tour d'Argent in Paris.
For this recipe, I used a Rohan duckling. The more common Peking duck is more fatty and does not work well.
Unlike other poultry, duck does not have issues with salmonella and can be eaten rosé (or quite rare).
