Wiener Schnitzel is the national dish of Austria. Austria is the home of world renowned musicians like Wolfgang Amadeus Mozart and...Falco. Schnitzel is traditionally made with thinly pounded out cutlets of meat. For our plant-based take, we fry up cauliflower steaks instead.
Yields 3 - 4 servings
INGREDIENTS:
1 large cauliflower, sliced into 1/2-inch-thick steaks. (Save the leftover florets for curry or buffalo wings)
Vegetable or canola oil, for frying
2 tbsp AP flour
1/4 cup chickpea flour (you can substitute AP flour if necessary
1/4 cup water
1 tbsp soy sauce
1 pinch freshly cracked black pepper
1 cup breadcrumbs
1 tsp salt
Lemon wedges, to serve
Potato salad or green salad, to serve (optional)
METHOD:
1. Cook the cauliflower: Steam cauliflower in a steamer basket until fork tender. Arrange on a plate and let cool completely. (Alternatively, if you don’t have a steamer basket: In a large deep-sided skillet, add enough water to come halfway up the sides of cauliflower. Bring to a simmer over medium heat, cover, and steam until fork-tender. Drain, arrange on plate, and let cool completely.)
2. Prepare the batter: Combine the chickpea flour, water, soy sauce and pepper in a mixing bowl and whisk into a smooth batter.
3. Prepare your dredging and breading stations: Dump your AP flour out on a plate. On a separate plate, dump your breadcrumbs combined with salt.
4. Prepare cauliflower for frying: Dip a cauliflower slice in the AP flour to finely coat it. Next dip the slice in the chickpea flour batter. Let the excess batter drip off. And finally, coat the slice in the breadcrumbs.Set aside until ready for frying and repeat until all slices are breaded.
5. Heat up a frying pan filled at least 1/2 inch with frying oil.To test if the oil is hot and ready for frying, drop in a few breadcrumbs. If you can immediately see and hear them bubble and sizzle up, the oil is ready.
6. Carefully place a schnitzel in the hot oil. For an evenly browned crust, the schnitzel should be literally swimming in oil. Fry for 2 minutes on each side, or until each side is a deep golden brown. Use tongs to turn over the schnitzel to avoid splashes of hot oil.
7. Arrange fried schnitzels over a baking rack placed over a paper towel-lined baking sheet. This ensures maximum crispiness. (Alternatively, arrange fried schnitzels over a plate lined with paper towels). Then sprinkle with salt and pepper.
8. Serve with lemon wedges. As side dishes, have potato salad or a green salad to accompany your schnitzel (optional). Enjoy!
