Spring is in the air and healthy easy meals are on my brain, so I’ve decided to bring you this delicious Quinoa Tabouli Salad . The simple, fresh flavors and whole ingredients in the salad pair perfectly with summer weather and Ramadan meals. #Recipes​

Quinoa Tabouli Salad
Yield: 4 Servings
Ingredients:
1 cups cooked quinoa
¼ cup chopped scallions
¼ cup fresh chopped mint
1 cup fresh chopped parsley
1 cup Persian cucumbers, chopped
¼ cup fresh squeezed lemon juice
3 tablespoons extra virgin olive oil
1 large tomato, diced
1tbs lemon zest
1 tbs dried mint
Salt and pepper to taste

Enjoy!

Storage Tip: Keeping fresh herbs rolled in a damp paper towel and sealed in a plastic bag in the fridge will keep it fresh for almost 2 weeks.
