Karah Prasad, also known as "Kada Prasad" or "Karha Prashad," is a delicious and sacred sweet served in Gurdwaras (Sikh temples) as a form of blessed offering during religious ceremonies. It's made with just a few simple ingredients and has a unique taste and texture. Here's the recipe to make Kadah Prasad at home:
Ingredients:
1 cup whole wheat flour (atta)
1 cup ghee (clarified butter)
1 cup sugar
2 cups water
Instructions:
In a medium-sized saucepan, add the water and sugar. Bring it to a boil, stirring until the sugar dissolves. Let the sugar syrup simmer for a few minutes until it reaches a slightly sticky consistency. You can check the consistency by dropping a little syrup between your fingers – it should feel sticky, but you should not form any threads.
While the sugar syrup is simmering, heat the ghee in a separate heavy-bottomed pan or kadai over medium heat.
Once the ghee is hot, add the whole wheat flour (atta) to it. Stir continuously to roast the flour in ghee until it turns golden brown and releases a nutty aroma. This process requires constant stirring to avoid burning. It usually takes about 10-15 minutes.
When the flour has turned golden brown, add the crushed cardamom pods (if using) and mix well.
Gradually add the hot sugar syrup to the roasted flour mixture. Be careful as it may splutter. Continue stirring vigorously to ensure there are no lumps and the syrup is well incorporated into the flour.
Cook the mixture on low heat for another 3-4 minutes, continuously stirring until the ghee starts to separate from the sides of the pan. The mixture should be smooth and have a halwa-like consistency.
Remove the pan from the heat. If you prefer, you can add a little more ghee on top for added richness, but this step is optional.
Allow the Karah Prasad to cool for a few minutes.
Serve the warm Kadah Prasad in small portions. Optionally, you can garnish with chopped nuts like almonds or pistachios.
