On my recent visit to Laos I had the chance to cook with Chef Ice, the executive chef at Rosewood Luang Prabang, a beautiful luxury resort tucked away in a jungle. We made leun som moo, a traditional Lao dish of royal origin made with pork and fermented fish eggs.
