List of ingredients ( for the stew base )
Carrot 8
4 red bell peppers
1 and half red onion
Scotch bonnet to taste
1 tablespoon white pepper
1 tablespoon smoked paprika
2 cups of vegetable oil
1/2 tablespoon garlic powder
1/2 tablespoon ginger powder
2 bay leaf
1/2 teaspoon black pepper
1/2 teaspoon curry powder
1/2 teaspoon thyme (. I mixed all of the seasoning together to make the seasoning mix mentioned in the video)
6 cups of long grain parboiled rice
To cook the chicken I used 👇🏽
2 chicken quarters
Some of the seasoning mix mentioned above
Coated with a blend of ( garlic, ginger, bell peppers , onion and seasoning ) which i blended with a bit of oil before air frying .
