This video is about homemade malt extract. We live in Bulgaria and malt extract is something that we've never found anywhere to buy, not only that, it's a step towards being self sufficient.
Malt extract is usually made from evaporated wort that contains malted barley with all it's natural maltose sugars. We could have made our wort by malting our own barley, but we've cheated a little by using 'promotion price' beer and putting back table sugars (sucrose) to give it the right balance. The beer will also contain mashed hops for flavoring so I chose a variety that was mild tasting.
How much sugar should you add?
Per 1 litre, per 1% of alcohol, the wort would originally had 18 grams of sugar. So, If using a 5% beer, for 1 litre it would be 18g x 5 = 90g of sugar.
Please note, I used a thin bottom pan (because it was the biggest I had to hold my 7 litres) and it burnt a little towards the end. I should have swapped pans to a thick base, when it had reduced over half way. We know for next time.
