Macaron

Ingredients
225 g finely ground almond flour
225 g confectioners' sugar (powdered sugar)
150 g egg whites, at room temperature (75 g add to the dough, 75 g whip with sugar syrup)
225 g granulated sugar
120 g water
1 pinch of salt
-------------------------
Filling to assemble the macarons
250 g Mascarpone
2 tbsp of confectioners' sugar (powdered sugar)
Pistachio flavor
-------------------------
-- The baking temperature is selected individually for different ovens.
-- Baking temperature ranges from 250°F - 300°F (122°C - 150°C).
-- We bring the syrup to 245°F (118°C - 119°C).
--The quality of the product is important (without various impurities).
