How To Make a Crispy Christmas Turkey in a Weber Kettle | Heat Beads BBQ

Ingredients
For the Turkey
1 whole turkey about 5 kg
2 tbsp olive oil
2 tsp salt
2 tsp cracked black pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp smoked paprika
For the Cavity
1 onion halved
1 lemon halved
1 garlic bulb halved
4 sprigs thyme
4 sprigs rosemary

Method
Prep Time: 20 minutes Cook Time: Varies by turkey weight Serves: 8 to 10
1. Prepare the Barbecue
Fill both charcoal baskets to the top with Heat Beads Original Briquettes.
Light the fire lighters with the bottom vent fully open.
Allow the briquettes to ash over completely. This takes about 30 to 40 minutes.
Set the barbecue for indirect heat by moving the baskets to the outer sides.
2. Use the Turkey Time Calculator
Head to the Heat Beads website and use the Turkey Calculator for exact cook timing.
For a 5 kg turkey with a 1 pm serving time, place it on the barbecue around 9.30 am.
3. Prepare the Turkey
Pat the turkey skin completely dry using paper towel.
Rub the skin with olive oil.
Season generously with salt, cracked pepper, garlic powder, onion powder and smoked paprika.
Stuff the cavity with onion, lemon, garlic, thyme and rosemary.
4. Start the Cook
Place the turkey in the centre of the grill.
Keep the bottom vent fully open for the first 20 to 30 minutes to encourage crisp golden skin.
After that, check the barbecue temperature every 30 to 60 minutes and adjust the vent slightly if the heat climbs too high.
If needed, tent the turkey with foil to help control the temperature.
5. Cook to Temperature
Use a reliable meat thermometer to confirm doneness.
Breast should reach 74°C or 165°F.
Thigh should reach 80°C or 175°F.
Check both areas to ensure the turkey is cooked safely and evenly.
6. Rest and Carve
Remove the turkey and rest briefly before carving.
Slice through the breast, then move to the legs and thighs.
Serve warm and enjoy the crispy skin and juicy meat.
