Baking bread in an air fryer is a convenient option, and choosing between stainless steel and borosilicate (or glass) depends on a few practical factors.
Stainless steel is durable, heats up quickly, and is safe to use in air fryers. It handles temperature changes well and doesn’t break. It's lightweight and won’t crack or shatter, making it a reliable choice. However, because it conducts heat so well, it may brown the crust a bit too quickly, especially on the bottom. Also, since it’s not transparent, you can’t see how the bread is baking inside.
Borosilicate glass, on the other hand, lets you see the bread as it rises and bakes. It heats more evenly and can give a well-rounded bake, but it takes longer to heat up. While borosilicate glass is made to handle heat better than regular glass, there’s still a risk of thermal shock—like if you preheat the air fryer and then put in a cold dish. That can cause cracking. It’s also heavier and can break if dropped or handled roughly.
If you're just starting out or want a safer, fuss-free option, stainless steel is the better bet. If you're comfortable handling hot glass and like being able to watch your bread as it bakes, borosilicate can work well too. Avoid using regular glass, though, as it’s not designed for rapid temperature changes in air fryers.
